Certified organic soy beans and brown rice are naturally fermented with Koji (Aspergillus Oryzae) without the use of chemicals or other additives. Koji is a type of fungus used in fermenting and also for making rice vinegars and alcoholic beverages such as sake. Water and salt is added to the soy bean, rice and koji and the mixture is aged for up to three years according to the traditional methods.
